1- Place all ingredients except sliced Banana in a bowl until combined. If you prefer a smoother batter, mix the ingredients in a blender on low to break down the oats.
2- Pour onto a non-stick fry pan, lightly oiled with coconut oil spray or extra virgin olive oil. Cook 1 at a time or multiples if pan is large enough.
3- Cook as per a normal pancake, until bubbling then flip and cook on the other side until cooked through.
4- Serve with sliced Banana and a few blueberries and a drizzle of sugar-free maple syrup if you like.
